- Preheat your oven to 425°F (220°C). Pat the chicken dry, season it with salt, pepper, and favorite Creole spices.
- In a bowl, mix softened butter, minced garlic, cayenne, paprika, and thyme to make Creole garlic butter.
- Rub the garlic butter under the chicken skin and over the outside of the chicken.
- Chop potatoes, carrots, and onions; layer them in a roasting pan as a bed for the chicken.
