  • 1/2 cup Unsalted Butter Softened
  • 4 cloves Minced Garlic Increase for extra kick
  • 1/2 tsp Cayenne Pepper Adjust to taste

  • 1 tsp Thyme Fresh or dried
For the Vegetables
  • 2 cups Yukon Gold Potatoes Chopped
  • 2 cups Carrots Chopped

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Pat the chicken dry, season it with salt, pepper, and favorite Creole spices.
  2. In a bowl, mix softened butter, minced garlic, cayenne, paprika, and thyme to make Creole garlic butter.
  3. Rub the garlic butter under the chicken skin and over the outside of the chicken.
  4. Chop potatoes, carrots, and onions; layer them in a roasting pan as a bed for the chicken.
  5. Place the chicken on the vegetables and roast for about 1 hour or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10-15 minutes before carving and serving with roasted vegetables.
