- Bring a pot of water to a boil. Cook udon noodles for 3-4 minutes, drain and rinse in cold water. Drizzle with neutral oil.
- Heat 1 tablespoon of neutral oil in a large pan. Sauté minced garlic for 1 minute, add mushrooms and cook for 2-3 minutes, then add onions and carrots, cooking further while seasoning.
- Add remaining oil and shrimp to the pan. Season and cook for 2-3 minutes, then remove and set aside with vegetables.
- Return the pan to heat and add udon noodles, stir-fry for 2-3 minutes. Add shrimp and vegetables back.
- Pour the sauce over the mixture and toss until evenly coated. Cook for 1-2 minutes until everything is heated.
- Serve hot in bowls, garnished with spring onions and sesame seeds if desired.
