Ingredients
  

For the Noodles
  • 200 grams Udon Noodles Use vacuum-packed varieties for best texture.
For Cooking
  • 2 tablespoons Neutral Oil Canola or vegetable oil recommended.
  • 300 grams Shrimp Can substitute with chicken or tofu.
For the Flavor Base
  • 3 cloves Garlic Minced.
  • 1 medium Yellow Onion Sliced.
  • 100 grams White Mushrooms Any preferred variety.
  • 1 medium Carrot Chopped.
  • 2 stalks Spring Onion Chopped.
For the Sauce
  • 3 tablespoons Soy Sauce Low-sodium if preferred.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjusted to taste.
  • 1 tablespoon Oyster Sauce Or a substitute like mushroom sauce.
  • 1 tablespoon Dark Soy Sauce For richer color.
  • 1 tablespoon Rice Vinegar Can substitute with apple cider vinegar.
  • 1 teaspoon Brown Sugar Or honey/maple syrup.
  • 1 teaspoon Toasted Sesame Oil For nutty flavor.

Method
 

Step‑by‑Step Instructions
  1. Bring a pot of water to a boil. Cook udon noodles for 3-4 minutes, drain and rinse in cold water. Drizzle with neutral oil.
  2. Heat 1 tablespoon of neutral oil in a large pan. Sauté minced garlic for 1 minute, add mushrooms and cook for 2-3 minutes, then add onions and carrots, cooking further while seasoning.
  3. Add remaining oil and shrimp to the pan. Season and cook for 2-3 minutes, then remove and set aside with vegetables.
  4. Return the pan to heat and add udon noodles, stir-fry for 2-3 minutes. Add shrimp and vegetables back.
  5. Pour the sauce over the mixture and toss until evenly coated. Cook for 1-2 minutes until everything is heated.
  6. Serve hot in bowls, garnished with spring onions and sesame seeds if desired.
