Ingredients
  

For the Cherry Base
  • 2 cups pitted fresh sweet cherries the star ingredient
  • 1 cup water enough to cover cherries
For Sweetening and Zing
  • 1/4 cup raw honey adjust to taste
  • 1 tablespoon lime zest preferably fresh
  • 1/3 cup lime juice freshly squeezed, about two limes
For Fizz and Garnish
  • 2 cups club soda or sparkling water
  • optional fresh cherries for garnish
  • optional lime wedges for garnish

Method
 

Prepare the Cherry Base
  1. In a medium saucepan, combine the pitted fresh sweet cherries with enough water to just cover them. Bring to a boil over medium heat, then simmer, mashing cherries gently as they cook.
  2. Cover the pot ajar and simmer for about 15 minutes until cherries are soft and juicy, releasing their vibrant flavor.
Blend the Cherry Mixture
  1. Transfer the cherry mixture into a blender. Add raw honey, lime zest, and lime juice. Blend until smooth.
  2. If desired, strain the mixture through a fine mesh strainer to eliminate solids, resulting in a silky cherry syrup.
Chill the Cherry Syrup
  1. Pour the strained cherry syrup into a container and cool at room temperature for about 10 minutes.
  2. Then, refrigerate for at least 30 minutes to enhance flavors.
Assemble Individual Servings
  1. Fill a glass with ice cubes. Pour 2 ounces of the chilled cherry syrup over the ice, and top with club soda to taste.
  2. Stir gently to combine, then garnish with fresh cherries and a lime wedge.
Make a Pitcher
  1. For a pitcher, fill a large pitcher with ice, combine all the chilled cherry syrup with enough club soda to fill the pitcher.
  2. Stir well and serve immediately.

Notes
