- In a stand mixer, combine 4 cups of all-purpose flour, 1 tablespoon of sugar, 2 teaspoons of instant yeast, and 1 teaspoon of salt. Pour in 1 ½ cups of warm milk and ¼ cup of melted butter. Using a dough hook, mix on medium speed for 4-5 minutes until the dough is smooth and elastic.
- Once your dough is ready, transfer it to a lightly greased bowl and cover it with a clean kitchen towel or plastic wrap. Place it in a warm spot to rise for 30-60 minutes, allowing it to double in size.
- As the dough rises, preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper and set them aside.
- On a floured surface, gently punch down the risen dough to release air. Divide it into 12 equal pieces. Roll each piece into a long rope, about 1/2 inch thick, then cut the ropes into 1-2 inch bites.
- Bring a large pot of water to a rolling boil and stir in ⅓ cup of baking soda. Carefully drop the dough pieces into the boiling water for 30 seconds. Use a slotted spoon to remove them and place them on the prepared baking sheets.
- In a small bowl, whisk together one large egg and a tablespoon of water to create an egg wash. Brush this mixture over the boiled pretzel bites, then sprinkle coarse salt generously on top. Place them in the preheated oven and bake for 12-14 minutes.
- Once baked, remove the Soft Pretzel Bites from the oven and let them cool slightly. Serve them immediately with your homemade honey mustard dipping sauce.
