For the Curry
  • 2 pounds Beef Chuck or brisket or short ribs for similar texture
  • 2 tablespoons Neutral Oil for browning beef
  • 1 large Onion chopped
  • 4 cloves Garlic minced
  • 2 tablespoons Garam Masala don't skip it!
  • 1 teaspoon Cumin ground
  • 1 teaspoon Paprika optional for reducing heat
  • 1 teaspoon Turmeric ground
  • 1 teaspoon Ground Mustard
  • 1 teaspoon Cayenne adjust to taste
  • 1 inch Ginger fresh or ground
  • 0.5 teaspoon Cinnamon just a pinch
  • 2 tablespoons Tomato Paste
  • 0.25 cup Apple Cider Vinegar or white vinegar
  • 2 cups Beef Stock low-sodium if preferred
For the Garnish
  • 0.25 cup Fresh Cilantro or Parsley chopped

Method
 

Step-by-Step Instructions
  1. Cut the beef chuck into 2-inch cubes and season with salt and pepper. Let it rest.
  2. Heat the oil in a skillet over medium-high heat. Brown the beef cubes for about 6 minutes.
  3. Reduce heat and add chopped onions. Sauté for about 15 minutes until golden brown.
  4. Add minced garlic and cook for an additional 2 minutes, stirring frequently.
  5. Stir in all the spices and cook for 1-2 minutes until fragrant.
  6. Incorporate tomato paste and cook for 2-3 minutes until glossy.
  7. Add apple cider vinegar and simmer for 2 minutes, scraping any browned bits.
  8. Pour in beef stock, return the beef to the skillet, and simmer for 1 hour.
  9. Check sauce consistency after simmering. Adjust with more beef stock if needed.
  10. Serve hot garnished with fresh cilantro or parsley.
