Method
 

Cooking Instructions
  1. Begin by pouring sunflower oil into a heavy-bottomed pot and heat it to 350°F.
  2. Slice the zucchini into thin rounds and fry them in batches for 5-7 minutes until golden.
  3. Refrigerate the fried zucchini for a minimum of 30 minutes.
  4. In a large pot, bring salted water to boil and cook spaghetti for 8-10 minutes.
  5. In a frying pan, heat olive oil and add chilled zucchini, then stir in reserved pasta water.
  6. Toss the drained spaghetti in the frying pan with the zucchini sauce, adding Parmesan and butter.
  7. Adjust sauce consistency with reserved pasta water as needed.
  8. Serve immediately, garnished with fresh basil.
