  • 1 cup Granulated Sugar
  • ½ cup Light Brown Sugar
  • 1 teaspoon Baking Powder

  • 2 tablespoons Lemon Juice fresh
  • 3 tablespoons Cornstarch
  • 2 tablespoons Strawberry Jam or Preserves optional
  • 1 teaspoon Vanilla Extract
For the Optional Glaze
  • 1 cup Confectioners’ Sugar
  • 2 tablespoons Milk or Heavy Cream dairy-free milk can be used
  • 1 teaspoon Lemon Juice for glaze

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C). Line a 9x13-inch pan with parchment paper, greasing it lightly.
  2. In a large mixing bowl, whisk together the dry ingredients for the crust.
  3. Cut chilled butter into the dry mixture until coarse crumbs form, reserving some for topping.
  4. Press the crumb mixture firmly into the bottom of your prepared pan.
  5. Combine filling ingredients in a bowl and stir until strawberries are coated.
  6. Spread the strawberry filling over the crust, then top with the reserved crumb mixture.
  7. Bake for 40 to 45 minutes until the topping is golden brown and filling bubbles.
  8. Cool completely on a wire rack for 2 to 3 hours before slicing.
  9. For glaze, whisk together glaze ingredients until smooth and drizzle over cooled bars.
  10. Lift bars from the pan using parchment, slice and serve!
