For the Chicken
  • 4 pieces boneless, skinless chicken thighs Can substitute with chicken breasts
  • 1/4 cup lime juice Fresh lime juice preferred, can use lemon juice
  • 2 tablespoons avocado oil Olive or vegetable oil can be used
  • 1 tablespoon chili powder Provides a smoky flavor, paprika is a substitute
  • 1 teaspoon garlic powder Fresh garlic can enhance flavor
For the Topping
  • 1 cup sweet corn kernels Grilled corn recommended
  • 1/2 medium red onion Thinly sliced, optional
  • 1/2 cup sour cream Greek yogurt can be used as a substitute
  • 2 tablespoons mayonnaise Optional, can use extra sour cream
  • 1/2 cup cotija cheese Feta or queso fresco are good alternatives
  • 1 teaspoon chili powder For additional flavor
For Serving
  • 2 pieces lime wedges For serving
  • 2 cups cooked jasmine rice Can substitute with brown or cauliflower rice
  • 1/4 cup fresh cilantro Or use parsley or green onions

Method
 

Marinating and Cooking
  1. In a mixing bowl, combine lime juice, avocado oil, chili powder, garlic powder, salt, and pepper to create a marinade. Add chicken thighs, toss to coat, cover, and marinate for 15-30 minutes.
  2. Heat a skillet over medium-high heat. Add marinated chicken and cook for 8-10 minutes on each side until golden brown and cooked through. Remove, let rest, then slice.
Preparing the Topping
  1. In a mixing bowl, combine sweet corn, red onion, sour cream, mayonnaise, cotija cheese, chili powder, salt, pepper, and lime juice. Mix well.
Assembling the Bowls
  1. Add a scoop of jasmine rice to each bowl, top with sliced chicken and the street corn topping. Sprinkle additional cotija cheese and cilantro if desired.
  2. Serve with lime wedges on the side for squeezing.
