For the Chicken
  • 1 lb Boneless Skinless Chicken Thighs Can substitute with chicken breasts
  • 2 tbsp Lime Juice Alternatively, use lemon juice
  • 2 tbsp Avocado Oil Olive or vegetable oil can be used instead
  • 1 tbsp Chili Powder Paprika can be a milder substitute
  • 1 tsp Garlic Powder Fresh garlic can be used for more flavor
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black Pepper Adjust to taste
For the Street Corn Topping
  • 1 cup Sweet Corn Kernels Grilled corn is preferred
  • 1/4 cup Red Onion Thinly sliced, optional for crunch
  • 1/2 cup Sour Cream Can substitute Greek yogurt
  • 2 tbsp Mayonnaise Optional, or use more sour cream
  • 1/4 cup Cotija Cheese Feta or queso fresco can be used
  • 2 tbsp Lime Juice Serve lime wedges alongside
For Serving
  • 3 cups Cooked Jasmine Rice Can swap for brown or cauliflower rice
  • 1/4 cup Fresh Cilantro Optional, for garnish
  • 2 pieces Lime Wedges For serving

Method
 

Preparation
  1. In a mixing bowl, combine lime juice, avocado oil, chili powder, garlic powder, salt, and black pepper. Whisk until well blended, then add the chicken thighs and marinate for at least 15-30 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes per side until golden brown and cooked through. Let rest before slicing.
  3. In a separate bowl, mix together sweet corn, red onion, sour cream, mayonnaise, cotija cheese, lime juice, salt, and pepper until well combined.
  4. Reheat the cooked jasmine rice in a saucepan or microwave until warm.
  5. Assemble the bowls with a layer of rice, sliced chicken, and street corn topping. Garnish with cilantro and extra cotija cheese.
  6. Serve with lime wedges on the side for extra zest.
