Step-by-Step Instructions
  1. Pat the cod fillets dry with paper towels, season with salt and pepper, and let rest.
  2. Heat olive oil in a large skillet over medium-high heat. Add cod and cook for 3-4 minutes on each side until golden brown. Transfer to a plate.
  3. In the same skillet, lower heat and sauté minced garlic for 30 seconds. Add halved cherry tomatoes and cook for 3-4 minutes.
  4. Pour in white wine to deglaze the pan, scraping browned bits, and let simmer for 2-3 minutes.
  5. Stir in chopped basil, then return the cod to the skillet and cook for another minute.
  6. Plate the cod, drizzling additional sauce on top and serve.
