Ingredients
  

For the Ribs
  • 1 rack Baby Back Ribs Look for a full rack for optimal tenderness.
  • 2 tablespoons Oil Canola, peanut, or vegetable to coat the ribs.
For the Dry Rub
  • 1 cup All-Purpose Coffee Dry Rub Customizable flavor base.
For the Coca-Cola BBQ Sauce
  • 1 can Coca Cola Provides sweetness and moisture.
  • 2 slices Ginger Fresh ginger is preferred.
  • 2 cloves Garlic Adds pungency and depth.
  • 3 small Shallots Can substitute with 1 small onion.
  • 1 tablespoon Chinese Cooking Wine Can use dry sherry or white wine.
  • 0.5 teaspoon Fish Sauce Or use soy sauce instead.
  • 2 tablespoons Ketchup Adds sweetness to the sauce.
  • 1 tablespoon Mustard Provides tanginess.
  • 2 tablespoons Sambal Oelek Or any hot sauce to taste.

Method
 

Prep and Cook Ribs
  1. Remove the silver skin membrane from the back of the ribs.
  2. Coat both sides of the ribs with oil.
  3. Sprinkle and rub the dry rub over the ribs.
  4. Wrap the ribs in aluminum foil and bake at 250°F for 2 hours and 45 minutes to 3 hours.
Make Coca-Cola BBQ Sauce
  1. Blitz garlic, shallots, and ginger in a food processor until finely chopped.
  2. Sauté the mixture in oil over medium heat until fragrant.
  3. Add remaining sauce ingredients and simmer until thickened.
Broil Ribs
  1. Unwrap the ribs and mix the juices into the BBQ sauce.
  2. Brush ribs with BBQ sauce and broil for about 10-15 minutes.
  3. Let the ribs rest, then slice and serve hot.
