  • 1 cup sweet chili sauce or honey and sriracha blend
For the Pineapple
  • 1 medium pineapple fresh or canned, drained
For Cooking
  • 2 tablespoons olive oil or neutral oil
For Extra Flavor
  • 1/4 cup fresh cilantro for garnish
  • 1 tablespoon lime juice add just before serving
  • to taste red pepper flakes for added heat

Method
 

Step-by-Step Instructions
  1. Combine shrimp, sweet chili sauce, soy sauce, garlic, and ginger in a bowl. Cover and refrigerate for 15-30 minutes.
  2. Cut pineapple into bite-sized chunks or drain canned pineapple. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Add marinated shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque.
  5. Remove shrimp and add pineapple to the same skillet. Cook for 2-3 minutes until heated through and caramelized.
  6. Return shrimp to skillet, mix with pineapple, and cook for another minute. Add red pepper flakes if desired.
  7. Transfer to a serving dish and garnish with cilantro and lime juice before serving.
