  1. Step 1: Activate the Yeast. Combine warm water, sugar, and active dry yeast in a small bowl. Let it sit for 5–10 minutes until frothy.
  2. Step 2: Make the Dough. In a large bowl, mix the flour and salt, create a well, add the yeast mixture and olive oil. Mix then knead for 5–7 minutes until smooth.
  3. Step 3: First Rise. Place the dough in a greased bowl, cover, and let it rise for about 1 hour until doubled.
  4. Step 4: Prepare the Filling. Mix garlic, parsley, basil, oregano, and optional spices in a small bowl.
  5. Step 5: Shape the Dough. Roll the dough into a rectangle about 1/4 inch thick.
  6. Step 6: Add the Filling and Cheese. Spread the garlic mixture, then sprinkle mozzarella and cheddar on top.
  7. Step 7: Roll and Seal the Dough. Roll the dough into a log, pinch the seams, and place seam-side down in a greased loaf pan.
  8. Step 8: Second Rise. Cover and let rise for 30 minutes. Preheat the oven to 375°F.
  9. Step 9: Bake the Bread. Brush with beaten egg and bake for 25–30 minutes until golden brown.
