- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the lean ground beef over medium heat for about 6-8 minutes, breaking it apart as it cooks. Drain excess fat.
- Stir in the taco seasoning and diced tomatoes and chiles; let this simmer for an additional 5 minutes.
- In a mixing bowl, combine shredded cheddar cheese and ranch dressing until smooth, then fold in the beef mixture.
- Carefully remove the phyllo tart shells and spoon the filling generously into each shell.
- Bake the filled shells for 8-10 minutes if thawed, or 10-13 minutes if partially frozen, until golden brown.
- Once baked, let the Taco Ranch Bites cool for 3-5 minutes before serving.
