  • 1 cup passion fruit purée frozen seedless or fresh and strained
  • 1 cup granulated sugar
  • 2 tablespoons sifted flour
  • powdered sugar optional topping

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line an 8x8 baking dish with parchment paper or foil.
  2. In a food processor, cream together the butter and granulated sugar until pale and fluffy.
  3. Add sifted flour and salt, pulsing until the dough resembles coarse crumbs, then press into the prepared baking dish.
  4. Bake the crust for 12-15 minutes until lightly golden.
  5. In a mixing bowl, whisk the eggs and passion fruit purée, then mix in granulated sugar and sifted flour until smooth.
  6. Pour the filling over the cooled crust and bake for 25-35 minutes until edges are set.
  7. Cool to room temperature for about an hour, then refrigerate for at least 1 hour before slicing.
