  • 1 teaspoon salt freshly ground
  • 1 teaspoon pepper freshly cracked

  • 6 slices bacon or turkey bacon
  • 4 tablespoons unsalted butter or olive oil
  • 3 cloves garlic freshly minced
  • 4 pieces shallots sliced
  • 2 sprigs fresh thyme or 1 teaspoon dried
For the Sauce
  • 1 cup dry white wine optional

Step-by-Step Instructions
  1. Rinse and pat dry the chicken thighs. Season with salt and pepper, and let rest.
  2. Preheat your oven to 350°F (180°C).
  3. Cook the bacon in a skillet over medium-high heat until crispy. Remove and set aside.
  4. Add butter to the skillet, then brown the chicken thighs skin-side down for 8-10 minutes. Flip and cook for another 6-7 minutes.
  5. Sauté the shallots and garlic in the skillet for about 10 minutes until caramelized.
  6. Combine chicken, dry white wine, reserved bacon, and thyme in the skillet. Season to taste.
  7. Bake uncovered for 30 minutes or until chicken is golden and the sauce has thickened.
  8. Let rest for a few minutes before serving on a platter with sauce over the top.
