Step-by-Step Instructions
  1. Prepare the Cookie Base: Melt butter in saucepan over low heat and let cool. In a bowl, whisk together melted butter, granulated sugar, and dark brown sugar. Mix in egg and vanilla extract until smooth.
  2. Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, baking soda, espresso powder, and a pinch of salt. Gradually add to wet ingredients, folding gently until combined.
  3. Chill the Dough: Use a cookie scoop to portion dough into 1.5-inch balls, roll into smooth balls and place on a lined baking sheet. Cover and refrigerate for at least 30 minutes.
