Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking pan with parchment paper.
  2. In a small bowl, combine the ingredients for the frangipane filling and chill in the fridge.
  3. In a large mixing bowl, whisk together melted vegan butter, granulated sugar, dairy-free milk, and almond extract until smooth.
  4. Sift in the all-purpose flour, almond flour, and baking powder, and mix until just combined.
  5. Press half of the dough into the bottom of the lined baking pan.
  6. Spread the chilled frangipane filling evenly over the cookie base.
  7. Crumble the remaining dough over the frangipane layer, leaving gaps for texture.
  8. Sprinkle sliced almonds on top and bake for 30-35 minutes until golden brown.
  9. Allow to cool completely in the pan before cutting into squares.
