Ingredients
  

For the Corn Ribs
  • 3 ears corn Choose longer ears for optimal ribbing.
  • 3 tbsp olive oil Can use other vegetable oils as a substitute.
  • 1 tsp sweet paprika powder Substitute with smoked paprika for a different flavor profile.
  • 1 tsp garlic powder Fresh garlic can also be used for added punch.
  • Salt & pepper To taste.
For the Aleppo Chili Butter
  • 3 tbsp vegan butter Can use a nut or seed-based fat as an alternative.
  • 1 tbsp olive oil To blend with butter for the chili mix.
  • 1.5 tbsp Aleppo chili flakes Substitute with other mild chili flakes if unavailable.
For the Lime Zest Cream Cheese
  • 125 g vegan cream cheese Replace with blended silken tofu for a lower-calorie option.
  • 1 lime zest Infuses freshness and a zesty kick.
  • 0.5 lime juiced Balances flavors with acidity.
For Garnishing
  • 2 tbsp toasted pine nuts Can substitute with sunflower seeds or omit for nut-free.
  • 1 green onion, finely chopped Chives can also be used.
  • 1 tbsp finely chopped coriander (or parsley) Optional.

Method
 

Step-by-Step Instructions
  1. Preheat your air fryer or oven to 180°C (355°F).
  2. In a mixing bowl, combine olive oil, sweet paprika powder, garlic powder, salt and pepper. Whisk together.
  3. Cut the corn in half and slice each half lengthwise to create 'ribs'.
  4. Brush each corn piece with the olive oil mixture.
  5. Air fry the corn ribs for 15 to 20 minutes, flipping halfway through.
  6. Melt vegan butter and olive oil in a small pan, then stir in Aleppo chili flakes.
  7. Combine vegan cream cheese with lime zest and juice until smooth.
  8. Serve corn ribs with lime zest cream cheese and drizzle with Aleppo chili butter. Garnish with pine nuts, green onions and herbs.
