  • 1 medium Avocado slightly ripe for color
  • 4 cups Fresh Spinach thawed frozen spinach can substitute
  • 1 cup Fresh Herbs (Basil & Dill) mix and match your favorites
  • 3 tablespoons White Wine Vinegar or use apple cider or rice vinegar
  • 2 cloves Garlic adjust quantity to taste
  • 2 stalks Green Onions shallots can be an alternative
  • 1 tablespoon Nutritional Yeast optional, can substitute with vegan parmesan
For the Dressing
  • 3 tablespoons Olive Oil drizzle over cooked pasta
  • 1 cup Ice Cubes to cool pasta quickly

Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a rolling boil. Salt the water and add pasta. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside to cool.
  2. Drizzle olive oil over warm pasta and toss to prevent sticking. Add ice cubes and stir until cooled, about 2-3 minutes.
  3. In a food processor, blend avocado, spinach, basil, dill, vinegar, garlic, green onions, and nutritional yeast until smooth and creamy.
  4. In the pot, combine cooled pasta, dressing, and any additional chopped veggies. Toss thoroughly for 1-2 minutes.
  5. Transfer salad to a serving bowl and garnish with green onions or herbs. Best enjoyed fresh or chilled.
