  • 3 cloves garlic minced
  • 3 cups jasmine rice (cooked) use any quick-cooking rice as a substitute

For the Veggies
  • 1 cup peas and carrots or any seasonal vegetables
  • 1 cup pineapple (diced) canned pineapple (drained) can be used
For the Flavor
  • 2 tablespoons soy sauce use tamari for gluten-free
For the Crunch
  • 1/2 cup cashews optional; can substitute with seeds
  • green onions & cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of sesame oil in a large skillet or wok over medium heat until shimmering.
  2. Add 3 cloves of minced garlic and sauté for about 30 seconds until fragrant.
  3. Add 1 cup of peas and carrots; cook for 3-4 minutes until tender.
  4. Stir in 3 cups of cooked jasmine rice, 2 tablespoons of soy sauce, and black pepper to taste; mix thoroughly.
  5. Fold in 1 cup of diced pineapple and if using, 1/2 cup of cashews. Cook for 2-3 minutes.
  6. Garnish with chopped green onions and fresh cilantro before serving warm.
