- Chop root vegetables into bite-sized pieces and cut beef into 1-inch cubes. Season with salt and pepper.
- In a large pot, heat oil over medium-high heat. Brown beef cubes in batches for 5-7 minutes.
- Remove beef and add minced garlic and chopped root vegetables; cook for 4-5 minutes.
- Deglaze the pot with red wine, scraping up bits. Simmer for 2-3 minutes.
- Return beef to pot with juices and add broth, bay leaves, and spices. Boil then simmer for 1.5 to 2 hours.
- Prepare pumpkin by cutting off the top and scooping out seeds.
- Taste and adjust seasoning, and consider thickening with cornstarch mixed with water.
- Serve stew in pumpkin or bowls, topped with mozzarella, bread, or puff pastry.
