For the Seasoning

Method
 

Preparation
  1. Chop root vegetables into bite-sized pieces and cut beef into 1-inch cubes. Season with salt and pepper.
  2. In a large pot, heat oil over medium-high heat. Brown beef cubes in batches for 5-7 minutes.
  3. Remove beef and add minced garlic and chopped root vegetables; cook for 4-5 minutes.
  4. Deglaze the pot with red wine, scraping up bits. Simmer for 2-3 minutes.
  5. Return beef to pot with juices and add broth, bay leaves, and spices. Boil then simmer for 1.5 to 2 hours.
  6. Prepare pumpkin by cutting off the top and scooping out seeds.
  7. Taste and adjust seasoning, and consider thickening with cornstarch mixed with water.
  8. Serve stew in pumpkin or bowls, topped with mozzarella, bread, or puff pastry.
