  • 2-3 Persian cucumbers diced
  • 1 cup corn fresh or canned
  • 1 bell pepper chopped
  • 1 cup grape or cherry tomatoes halved
  • ½ cup red onion finely chopped, soaked in ice water
  • ¼ cup cilantro chopped
  • ¼ cup mint chopped, optional
  • ½ cup Cotija cheese crumbled
For the Dressing

  • 2 fresh limes juiced
  • 1 lime zest
  • 2 tablespoons red wine vinegar
  • 1-2 tablespoons honey to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon chipotle powder

Method
 

Instructions
  1. In a large mixing bowl, combine the salad ingredients: Persian cucumbers, corn, bell pepper, grape or cherry tomatoes, red onion, cilantro, mint, and Cotija cheese. Gently toss to combine.
  2. In a separate medium bowl, whisk together the dressing ingredients: olive oil, lime juice, lime zest, red wine vinegar, honey, garlic powder, dried oregano, chipotle powder, salt, and pepper. Ensure the dressing is smooth.
  3. Drizzle the dressing over the salad mixture and toss gently to coat. Cover and refrigerate for at least 1 hour.
  4. Before serving, taste the salad and adjust seasoning if needed. Serve chilled.
