  • 1/4 cup Honey or Maple Syrup Adjust to taste
  • 2 tablespoons Lemon Zest Zest lemons before juicing
  • 1/2 cup Coconut Flakes Use unsweetened
  • 1/2 cup Protein Powder Can use plant-based
For the Mixture
  • 1-2 teaspoons Non-Dairy Milk Optional, for consistency
  • 1 tablespoon Poppy Seeds Optional, for crunch

Step-by-Step Instructions
  1. Soak raw cashews in water for 30 minutes, then drain and pat dry.
  2. In a food processor, blend cashews, honey, lemon zest, coconut flakes, protein powder, and poppy seeds until mostly smooth.
  3. If too thick, add non-dairy milk gradually until smooth. If too wet, add more protein powder or coconut flakes.
  4. Scoop mixture with a tablespoon and roll into balls approximately 1 inch in diameter.
  5. Refrigerate rolled balls on parchment paper for 30 minutes to set.
  6. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
