Step-by-Step Instructions for Lime Bars
  1. Preheat your oven to 350°F (175°C) and prepare an 11x7-inch baking pan lined with parchment paper.
  2. Combine all-purpose flour, powdered sugar, salt, and cold cubed unsalted butter in a food processor until resembling coarse crumbs. Press into the bottom of the pan and bake for 18-20 minutes until golden.
  3. While the crust is baking, whisk together granulated sugar and a touch of flour in a bowl. Add eggs one at a time, mixing thoroughly, then fold in lime zest, lime juice, and food coloring if using.
  4. Pour the lime filling over the hot crust and spread evenly with a spatula. Bake for an additional 18-20 minutes until just set.
  5. Allow to cool completely on a wire rack for about 1 hour, then refrigerate for 1-2 hours to firm up before cutting into squares.
  6. Dust with powdered sugar before slicing. Cut into squares and serve.
