  • 4 cups Coleslaw Mix opt for a fresh mix for best flavor
  • 1 Red Bell Pepper diced
  • 1 Orange Bell Pepper diced
  • 1 cup Black Beans drained
  • 1 cup Corn drained
  • 1/4 cup Cilantro finely chopped
  • 1 Jalapeño minced, seeds removed for less heat
For the Dressing
  • 1/2 cup Mayonnaise or Greek yogurt for a lighter alternative
  • 1/4 cup Sour Cream or Greek yogurt
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Taco Seasoning adjust according to spice preference

Method
 

Preparation
  1. In a medium bowl, whisk together mayonnaise, sour cream, lime juice, and taco seasoning until smooth. Cover and chill in the refrigerator.
  2. In a large bowl, combine coleslaw mix, diced red and orange bell peppers, black beans, corn, cilantro, and jalapeño. Toss gently.
  3. Pour the chilled dressing over the vegetable mixture and fold until well coated.
  4. Cover and refrigerate for about 30 minutes to let flavors meld before serving.
