  • 3 oranges mixed cara cara, blood orange, and navel
  • 2 avocados ripe California
  • 3 scallions both white and pale green parts
For the Dressing
  • 1/2 cup cilantro leafy tops only
  • 1/4 cup lime juice freshly squeezed
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon sea salt season to taste
  • 1 teaspoon freshly cracked black pepper adjust according to preference

Step-by-Step Instructions
  1. Rinse oranges and avocados under cool water. Peel oranges and slice thinly. Arrange them on a large platter.
  2. Cut avocados in half, remove the pit, slice into wedges and peel. Nestle between the orange slices.
  3. In a food processor, combine cilantro, lime juice, olive oil, and scallions. Process until smooth.
  4. Taste the dressing and adjust seasoning with sea salt or lime juice as needed.
  5. Drizzle the dressing over the orange and avocado slices. Garnish with scallions and black pepper.
  6. Serve the salad fresh as a side dish or light meal with extra dressing on the side.
