Truffle Preparation
- In a medium saucepan, combine the fresh orange zest and heavy cream. Heat the mixture over medium heat for about 5 minutes, stirring occasionally, until warm but not boiling.
- Remove the saucepan from heat and add the white chocolate to the infused cream. Stir until the chocolate melts completely and the mixture is smooth.
- Mix in the orange juice, lime juice, and tequila until well combined.
- Transfer the ganache mixture to an airtight container and refrigerate for about 2 to 3 hours, or until it becomes a soft set.
- Use a small cookie scoop to portion out the mixture and roll each portion between your hands to form smooth balls.
- Roll each truffle ball in granulated sugar until fully coated, then refrigerate for an additional hour until set.
