  • 1 cup Cucumber can substitute with zucchini
  • 1 medium Green Bell Pepper can swap with yellow or red
  • 1 medium Red Bell Pepper
  • 1/2 medium Red Onion can use green onions
  • 1/2 cup Black Olives optional
For the Dressing
  • 1/2 cup Italian Dressing use homemade or store-bought
  • 1/4 cup Grated Parmesan Cheese optional for garnish, omit for vegan

Preparation Steps
  1. Start by bringing a large pot of salted water to a rolling boil over high heat. Once boiling, add your spaghetti and cook according to package instructions, typically 8-10 minutes, until al dente.
  2. Once the spaghetti is cooked, carefully drain it in a colander and rinse under cold water to stop the cooking process.
  3. Chop the cherry tomatoes, cucumber, bell peppers, red onion, and slice the olives. Aim for uniform pieces.
  4. Combine the cooled spaghetti and chopped vegetables in a large mixing bowl, tossing gently.
  5. Pour the Italian dressing over the salad and toss until evenly coated.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. If desired, sprinkle with grated Parmesan cheese.
  8. Cover and chill in the refrigerator for at least 1 hour before serving.
