  • 1 pound boneless, skinless chicken thighs or chicken breasts as substitute
  • 2 tablespoons jerk seasoning homemade or store-bought
  • 2 tablespoons olive oil or avocado oil
For the Grilled Pineapple
  • 1 whole ripe pineapple sliced into rings
For the Coleslaw
  • 1 bag coleslaw mix cabbage and carrots
  • 1/2 cup mayonnaise or Greek yogurt/vagan alternative
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 tablespoon honey optional
  • to taste salt and pepper
For the Sandwich Assembly
  • 4 buns burger buns gluten-free buns optional
  • to taste fresh cilantro or parsley optional for garnish

Method
 

Instructions
  1. In a large bowl, combine chicken thighs with jerk seasoning and olive oil. Marinate for at least 15 minutes.
  2. Preheat the grill to medium heat (350°F). Slice pineapple into rings and grill for 3-4 minutes on each side.
  3. Grill the marinated chicken thighs for 6-7 minutes on one side, then flip and cook for another 6-7 minutes until fully cooked.
  4. In a separate bowl, prepare coleslaw by combining coleslaw mix, mayonnaise, apple cider vinegar, honey, salt, and pepper.
  5. Assemble the sandwich with a grilled chicken thigh, a slice of pineapple, and a generous portion of coleslaw on each bun.
  6. Garnish with cilantro or parsley, serve on a platter with extra coleslaw on the side.
